Photoshop PANTONE?

In Photoshop if you have a JPG with color that is not a PANTONE color how do you go about converting it into a PANTONE color?

Example: If you have a blue mustang (horse) photo that is a jpg. Than you open the JPG in Photoshop what to you do next to convert the color into a pure PANTONE color?

Photoshop PANTONE?live update

In Photoshop I really don't know. In Photopaint, from Corel Graphics Suite, you set the image mode of your jpg file to dual tone or monotone, and set it to the desiderd pantone.

Perhaps photoshop has a feature similar to this...
